Spinach & Mushrooms

These two are my heroes. When I sauté spinach and mushroom with some garlic and olive oil, I have a meal. I always try to have these in my fridge. They make for a fast and delicious meal. Try this base and then:

-       Toss it with some lentil pasta

-       Roll it into a crepe (with some cashew cheese!)

-       Serve it with a fried egg on top

-       Sauté with rice leftovers with some soy sauce for “fried rice”

-       Makes a great side for salmon (or any protein)

-       Chopped finely is delicious mixed in with couscous

-       Served over roasted potatoes (I cube my potatoes and roast into a hash with onions and yes, more garlic)

- Used raw, these make the beginnings of a great salad
