Crispy Kale
In most instances, I am doing more than one thing. It’s almost guaranteed that when I have a time sensitive dish on the stove, one of my children urgently needs me. Being wrapped up in the moment (hunting for a missing lego piece), I all but forgot about my kale on the stovetop. When my nose caught a whiff of some delicious garlic smell, I ran. Back at the stove, my children had just invented what is now one of my favorite toppings: crispy kale!
My swift kitchen action doesn’t always allow for the patience of a lovely thing like crispy kale. This moment however, the kale (chopped into small pieces) was slowly cooking in a little olive oil, minced garlic and salt and voila! Crispy kale was born. Try it over navy beans, eggs, ramen, roasted sweet potatoes and more! It’s actually delicious all by itself too.
A note of caution: I have tried recreating this, with impatience nipping at my heels, and it ended up more burnt than crispy. So, do be patient with your low flame.
