The Avocado
I think we can all agree on the complete awesomeness of the avocado. If you’re like me, I often begin with the avocado and then figure out what else I’ll eat. Especially for lunch, this gem of a fruit (yep, it’s a fruit though it’s nutritional profile resembles a vegetable) is an easy go-to.
How to use:
Plain! with salt and lime of course
Spread on some toast, with topping of your choice
Taco topper
Mashed up as guacamole
Make your own sushi (my kids’ favorite)
A side to your fried rice, balances salty flavors so nicely
As an edible bowl, fill with a mix of beans, salsa, crumbled cheese and a drizzle of crema lima
With an egg (which also goes with just about anything)
As dessert! I haven’t tried it yet, but you can make chocolate mousse with them
Seriously, the sky is the limit! Topper, side, mashed or whole: it’s perfection. An avocado is also packed with Vitamin C, B6, magnesium, protein and some calcium. Enjoy every last bite!
