Real Food, Real Fast: Couscous

If ever there was a food that is both real and fast, it’s couscous. Here’s a whole grain that is a blank canvas for flavor. There are two types: the traditional (tiny grains) and the Pearl or Israeli variety (large rounds). They each have a very different texture. I encourage you to try them both!

Here’s a simple recipe (works for either variety):

Prepare traditional couscous according to box, but sub vegetable stock for water. If you have it on hand, add bay leaf to liquid. (It will taste great even without it.) 

Chop up ½ box of mushrooms, as desired (my kids only eat mushrooms finely chopped, but I’m fine with coarsely chopped)

Sauté with a bag of spinach and minced garlic, salt and pepper.

When couscous is finished, combine with sautéed veggies and mix to combine. Taste for salt. I love to top mine with some crushed red pepper and chopped avocado (with salt and lime).

A meal in under 10 minutes – enjoy!!
