Real Food, Real Fast: Bean Soup

As a longtime vegetable lover, and now vegan, beans have been a staple of my diet. Over the last few years, I’ve really loved making all sorts of soups with them.

A simple fave is a cannelloni bean soup.

In a big pot, sauté some onions and garlic. Once cooked, sauté your vegan chorizo (or meat chorizo). If you do go the meat route, I used to buy chorizo ground meat or in a pinch use a spicy italian sausage with the casing removed. Once this is slightly cooked, add in chopped kale (I like it minced) and sauté for a minute or two. Add in pre-cooked (or canned) cannelloni beans and enough vegetable broth to desired amount of broth. Cook covered and it’s ready in about 15 minutes. If you have time, let it simmer for a while to really meld the flavors. Salt, pepper and crushed red pepper to taste.
