Real Food, Real Fast - Ramen

Creating fast food at home isn’t cheating. There’s a healthy way to maintain sanity. One of my favorite ‘real food, real fast’ meals is taking a packet of ramen and adding in a few quick veggies and protein. It’s done in under 10 minutes and it’s totally satisfying!

Here’s the run-down:

I love Lotus Foods brand ramen. The ingredients are minimal but it’s flavorful all on its own. Prepare whatever brand you have as per directions on package. While the water is boiling for noodles, sauté up some chopped kale, mushrooms, garlic and a protein (l like extra-firm tofu) in olive oil, a splash of soy sauce and coconut aminos (this adds a bit a sweetness). For meat eaters, you could do a boiled egg or animal protein of your choice. Salt and pepper to taste. I love to add in some heat like crushed red chilis or some chili mix. When ramen is done, pour into your bowl and top with your sauté mixture! Enjoy!!
